  • 1 cup plain flour
  • 1 cup sugar
  • 2 eggs
  • ½ cup unsalted butter
  • 2oz unsweetened chocolate
  • ½ teaspoon baking powder

  • ½ cup unsweetened applesauce
  • 1 package miniature marshmallows (white)
  • 1 teaspoon vanilla extract

For the glaze

  • ½ cup sugar
  • 2 tablespoons butter
  • 2 tablespoons milk
  • ¼ cup chocolate chips

How to:

  1. Preheat the oven to 350ºF.
  2. Melt the dark chocolate in the microwave.
  3. In a bowl, combine the flour, baking soda, baking powder, and salt.
  4. In a larger bowl, beat the eggs, sugar, vanilla, and the applesauce. Stir in the melted chocolate and mix well.
  5. Stir in the flour mixture and mix well.
  6. Pour the cake mix into a 13×9 inch baking pan and let it bake for 20-30 minutes. You can also try the toothpick test to check if the cake is ready.
  7. Set half-a-cup of marshmallows for the glaze and sprinkle the rest on the cake.
  8. Heat a saucepan and add in milk, sugar, butter, and bring it to a boil. Let it boil for one and a half minutes and remove from heat.

  • 1 stick unsalted butter
  • 1 cup sugar

  • ½ cup low-fat buttermilk
  • 1 cup fresh strawberries, hulled and finely chopped
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt
  • 3 pints vanilla ice cream, softened
  • 1 tablespoon raspberry jam

How to:

  1. Preheat the oven to 350ºF.
  2. In a bowl, combine the flour, baking soda, baking powder, and salt.
  3. Whisk the butter and sugar into a fluffy mixture using an electric mixer. To this, add one egg at a time, while mixing continuously.

  • 1 cup butter, softened

You will need:

  • 1 cup almond milk (unsweetened )
  • 1tbsp apple cider vinegar
  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2tsp baking powder
  • 1 1/2tsp baking soda
  • 1tsp table salt
  • 1/2 cup canola or melted coconut oil
  • 2/3 cup unsweetened applesauce
  • 1tbsp pure vanilla extract
  • 1 cup boiling water

For the glaze:

  • 1 cup cocoa powder
  • 1 1/2 cups vegan butter
  • 4-5 cups powdered sugar
  • 2tsp pure vanilla extract
  • 1/2 cup unsweetened almond milk

How to:

  1. Preheat the oven to 350 degrees Fahrenheit and grease two 9-inch cake pans. Line them with parchment paper and sprinkle flour to remove the cakes easily later.
  2. Add a cup of unsweetened almond milk and a tablespoon of vinegar. Stir slightly, and set it aside to curdle.
  3. Combine flour, salt, sugar, cocoa powder, baking powder, and baking soda in a mixing bowl and whisk well to mix.
  4. Add the oil, vanilla, and almond milk/vinegar mixture to the dry ingredients. Use a hand mixer on medium speed until well combined.
  5. Reduce the speed and slowly add boiling water; mix the cake batter until combined. The batter may seem runny, but that’s the desired consistency.
  6. Divide the batter between the cake pans. Bake them for 30-35 minutes, remove, and cool them. After 10 minutes of cooling, carefully remove the cakes and let them cool completely before frosting.
