For the dark chocolate ganache

  • 400g dark chocolate, broken into small pieces
  • 300ml thickened cream

How To:

Making chocolate ganache:

  1. In a small food processor, place the chocolate and grind until it is finely chopped.
  2. Transfer the cream to a small saucepan over medium heat and bring it to a gentle boil.
  3. Slowly add the cream to the chocolate while the motor is running, and process until smooth.
  4. Transfer to a bowl and place in the refrigerator for ten to fifteen minutes, stirring from time to time, or until thickened.

Making the cake:

  1. Place one cake on a round cake board or serving dish, icing side up. Put another cake on top, icing side down. To attach, lightly press down.
  2. Transfer the leftover cake to a cutting board. To get rid of the frosting, trim the top of the remaining cake with a serrated knife.
  3. Using an 11–12 cm circular plate or bowl as a template, cut out a smaller cake disk. Put the disk on top of the stacked cake, cut-side down.
  4. Set aside 2tbsps of the chocolate ganache. Cover the entire top and edges of the cake with the remainder.
  5. Set aside one flake. The remaining flakes should be roughly chopped and pressed onto the sides of the bottom cake layer.
  6. Put the coconut into a little bowl. Stir in the green food coloring into it and mix well. As grass, sprinkle green coconut flakes on top of the bottom cake layer.
  7. Slice off the pointed end of the waffle cone with a serrated knife. Place on top of the smaller cake, cut-side up, to create the volcano shape.
  8. Apply some of the reserved chocolate ganache to the cone. Chop 2 tsp dark chocolate bits coarsely and the chocolate biscuits finely. To cover, press the chocolate bits and biscuit into the volcano’s side.
  9. Decorate the cake’s top layer with the leftover chocolate chips, Lindor Balls, and Maltesers, around the volcano.
  10. Put the remaining flakes that had been set aside in the grass. Drizzle the flake with some of the saved chocolate ganache, then attach the spearmint lolly leaves to create a tree.
  11. Use toy dinosaurs, artificial grass, and palm trees to decorate the cake.
  12. Cut a sparkler to fit inside the volcano and place it slightly above it for serving. Serve right away after lighting.
