  • ½ cup brown sugar
  • 2 kaffir/makrut lime leaves (finely sliced)

You Will Need:

  • Boiled eggs
  • 1 (14.5-ounce) can mushrooms in juice, drained (about 5 tomatoes)
  • ¼ cup extra-virgin olive oil
  • Pinch red pepper flakes
  • 1 small clove garlic, thinly sliced
  • ½ teaspoon dried oregano

  1. Remove the shells of the boiled eggs. Cut them elongatedly.
  2. Heat oil in a medium skillet over medium-high heat.

You Will Need:

  • 125g/4oz breadcrumbs
  • 275g/10oz sausage meat
  • 4 free-range eggs large
  • 1 free-range egg, beaten
  • 125g/4oz plain flour, seasoned with salt and freshly ground black pepper
  • 1 tbsp chopped fresh parsley
  • 1 tsp thyme leaves fresh
  • 1 spring onion, finely chopped
  • Freshly ground black pepper and salt
  • Vegetable oil

How To:

  1. Boil eggs. Drain out the water. Peel the shell off.
  2. Combine sausage meat, parsley, spring onion and thyme in a bowl. Season with salt and ground pepper.
  3. Mix flour with sausage meat. Divide and flatten the mixture on a plain surface into ovals.
  4. Dredge boiled egg in seasoned flour.
  5. Wrap the sausage meat around each egg while ensuring a smooth coating.
  6. Now dip the sausage meat-coated egg in beaten egg and roll into breadcrumbs to cover on all sides.
  7. Fry the rolls until golden brown and crisp.
  8. Once cool, it is ready to serve.

14. Potato-Egg Tapas

You Will Need:

  • 3 medium-size potatoes
  • 6 large eggs
  • 1 large onion
  • 2 large red peppers
  • 2 garlic cloves
  • 3 tbsp olive oil
  • ½ tsp dried crushed chili flakes
  • Handful of flat-leaf parsley

How To:

  1. Preheat the oven at 200C.
  2. Heat 2tbsp of olive oil in a pan.
  3. Toss in thinly sliced onions.
  4. Now add peeled and thinly sliced potatoes and gently fry for 20 minutes.
  5. Once the potatoes are tender, add crushed garlic. Also add quartered, seeded and thinly sliced peppers and keep stirring for another 5 minutes.
  6. Tip the contents into a large bowl and cool for 5 minutes.
  7. Add eggs, finely chopped parsley.
  8. Let it settle for 5 minutes.
  9. In the meanwhile put a nonstick 20cm square tin and heat in the oven for 5 minutes. Remove the tin. Brush it with oil. Pour in the egg mixture and return to the oven.
  10. Cook for another 20 minutes till the mixture is no longer runny.
  11. Once cooked, remove the mixture and let it cool for 5 minutes.
  12. Cut into squares to serve.

15. Spanish Omelet

You Will Need:

  • 500g potatoes
  • 1 white onion
  • 3 tbsp chopped flat-leaf parsley
  • 150ml extra-virgin olive oil
  • 6 eggs

How To:

  1. Slice the potatoes (peeled or unpeeled).
  2. Chop the onion.
  3. In a large frying pan, heat oil.
  4. Add potatoes and onions. Saute for 30 minutes with a partially covered lid and stir occasionally.
  5. Once the potatoes are softened, strain them out along with onions through a colander into a large bowl.
  6. You can keep the strained out oil aside for later use.
  7. Beat the eggs. Stir them into the potatoes. Add parsley.
  8. Add salt and pepper as per your taste.
  9. Heat the strained oil in a smaller pan and toss the cooked contents into it on moderate heat.
  10. Shape the content into a cushiony omelet using a spatula.
  11. Once the omelet settles, tip it back into the pan and cook for a few more minutes.
  12. Keep tossing for a few minutes while pressing the edges to hold the cushion shape.
  13. Serve the omelet once it cools.

  • 3 eggs
  • 1 cup milk
  • Finely grated carrots
  • Finely chopped onions
  • Finely copped spring onions
  • Chopped mushrooms
  • Grated cheese
  • Salt
  • Pepper

How To:

  1. Beat the eggs.
  2. Add milk.
  3. Add a pinch of salt.
  4. Stir the contents and remove the chalazaeiTwo thick transparent strands that link to membrane linings on either end of the egg to hold and support the yolk by using a sieve.
  5. Add finely chopped vegetables.
  6. Add pepper.
  7. Stir the contents.
  8. Heat a non-stick frying pan, preferably 10 inches in diameter. Grease it with vegetable oil before you heat it.
  9. Pour in half of the egg mixture and cook it over low heat until half done.
  10. Roll the omelet half way to the middle.
  11. You may apply more oil to the pan each time you have to roll up.
  12. Pour in ¼th of the egg mixture on the empty side of the pan merging with the half rolled omelet.
  13. Keep it half-cooked.
  14. Roll the omelet again to the center of the pan.
  15. Repeat the process by pouring in the rest of the egg mixture, leaving it half cooked.
  16. Roll up the omelet.
  17. Tip it on to a board to cool and cut it into rolls.

17. Indian Masala Fried Egg

You Will Need:

  • 2 Eggs
  • 1 tsp Garlic-ginger paste
  • 2 tsp finely chopped coriander leaves
  • ¼ tsp Garam Masala Powder
  • Big Onion – 1 chopped finely
  • Salt – to taste

Roast and Grind:

  • ½ tsp fennel seeds
  • ½ tsp coriander seeds
  • 1 tsp whole peppercorns

How To:

  1. Boil the eggs for 7-10 minutes on medium flame. Once the eggs cool, remove the egg shell.
  2. Dry roast fennel seeds, coriander seeds and whole peppercorns until golden brown. Once it cools, powder it coarsely and set aside.
  3. Cut the eggs vertically into two halves.
  4. Heat oil in a pan.
  5. Add onion, garlic-ginger paste and fry till golden brown.
  6. Add the masala mix. Fry the masala for a minute.
  7. Add salt.
  8. Add very little water.
  9. Tip in the long slit eggs.
  10. Cook covered for 2 mins.
  11. Toss the eggs around and fry for another minute.
  12. Garnish with coriander leaves.

  • Poblano peppers
  • Vegetable oil

  3. Roast poblano peppers with vegetable oil.

  • lb elbow macaroni (I prefer Ronzoni by any brand is as good as the next one)
  • 8 -10 eggs (use only 2 whole, the rest only whites)
  • 2 small onions (finely chopped)
  • ½ teaspoon butter
  • 1 teaspoon mustard
  • 1 teaspoon Black Gram
  • 1 teaspoon Bengal gram
  • 3 green chilies
  • ½ teaspoon garlic ginger paste
  • ½ teaspoon turmeric powder
  • 4 -6 quarts water
  • 2 ½ teaspoons salt
  • 9 teaspoons olive oil

How To:

  1. Bring water to a rolling boil in a large pot. Add 1.5 tsp of salt and 2 tsp of oil.
  2. Add macaroni and stir. Cook for not more than 9 minutes without reducing the flame.
  3. Drain the macaroni and add butter and set aside.
  4. In another pan, heat remaining oil. When hot, add mustard. Once the mustard splutters, add black gram and Bengal gram.
  5. Once the grams are brown, add onions and saute till translucent.
  6. Add green chillies, turmeric powder, garlic-ginger paste and salt.
  7. Make scrambled eggs.
  8. Add scrambled eggs to the pasta and mix well. Serve hot.

21. Ham And Egg Noodle Soup

You Will Need:

  • 250g cooked ham
  • 2 carrots (finely chopped)
  • 2 spring onions (finely chopped)
  • 2 celery sticks (finely chopped)
  • 1 red pepper, chopped
  • 1 crushed garlic clove
  • 2 liters chicken or vegetable stock
  • 4 eggs
  • 100g dried egg noodles
  • 1/2tsp dried mixed herbs

How To:

  1. Add garlic, carrots, red pepper, and celery sticks in a large pan, along with the chicken or vegetable stock and herbs. Let it boil and then simmer on low heat for 10 minutes.
  2. In another pan, boil water and cook eggs for six minutes. Once cooled, cut them in half.
  3. Add cooked ham, egg noodles, and spring onions to the soup and let it simmer till the noodles are cooked.
  4. Pour the soup and its contents into a bowl and place the eggs on top. Serve warm.
